Building Confidence in the Kitchen: Alana Kysar

Alana Kysar will lead a virtual cooking demonstration, featuring recipes from her cookbook "Aloha Veggies: Veg-Forward Recipes Celebrating the Flavors of Hawai'i."
Prepare the ingredients below and cook along with Alana! During the program, Alana will discuss how she developed this recipe and teach kitchen skills to make the recipes in her cookbook more approachable.

May 27th recipe ingredients: Globe Eggplant Katsu (Pg. 33)
- 2 globe eggplants
- Neutral oil for frying
- 1/4 cup all-purpose flour
- 2 tablespoons potato starch
- Kosher salt and freshly ground black pepper
- 2 large eggs, beaten
- 1 teaspoon soy sauce
- 1 1/2 cups panko bread crumbs
- Flaky salt, for serving
- Katsu sauce, for serving

About the author: Born and raised in Hawai’i, Alana Kysar grew up in a kitchen inspired by the local cuisine and her Japanese-American heritage. Cooking and sharing beautifully curated experiences with family and friends is her love language. After living in California for 10+ years, she returned to her island home of Maui at the beginning of 2022 with her husband. She is a cookbook author, recipe developer, and photographer working from her home studio in Kula, Maui.
